Paprikash

paprikash Ingredients:

  • 1 lb. chopped pork, beef or chicken meat
  • 1 tbsp. fat
  • 2 onion, chopped
  • 2 tbsp. sweet paprika spice
  • 1 tsp. of salt
  • 4 cups of water
  • 1 cup tomato sauce
  • 1/2 lb. potato
  • 1/2 lb. carrots

This recipe of Paprikash is how I do it, not some widely accepted or established recipe especially because no two Paprikash recipes are the same. The way I like it is with more water so the end result is close to soup, but rich with noodles, potatoes and meat. I don't use flour here at all and I like it spicy but not everyone does so sweet paprika is used instead. That should not be a problem cause hot paprika can be added later and everybody can enjoy the meal as they like.

   
I'll start with chopped onions and carrots with a tablespoon of bacon fat (it's chicken fat in this case) and half a cup of water. Place it on the preheated hotplate for about 15 minutes and stir occasionally.

   
Then add chopped potato, meat, spices and 1 cup of sieved tomato sauce.

   
Then add enough water to cover everything in a pan. You will lose some water while cooking so add some when needed. Now you need about two hours of cooking while occasionaly stirring and just before the end add some noodles, say some 20 minutes before you remove the pan from the hotplate.

I think this dish is reasonably simple but you need to have some time to spend and the end result is a fantastic meal and you don't really need to have a soup as a starter to it so I see it as a relatively simple meal with all in it.

Also, you don't need to add noodles if you don't want, paprikash may be even better without it for some so you can cook them in a separate pan and everyone will decide for themselves..
