Cherry Cake

cherry cake Ingredients:

Batter:

  • 1 and 1/2 cups flour
  • 1 tsp. baking powder
  • 4 eggs
  • 3/4 cup of sugar
  • 3/4 cup margarine or butter
  • 1 lemon peel
  • 1/3 tsp. salt
  • 3 cups of cherries

Coating:
  • 1/4 cup sugar
  • 2 eggs
  • 1 and 1/2 cup sour cream
  • 1 tsp. vanilla sugar
  • 1 tbsp. starch flour

This cherry cake recipe is again something simple and relatively fast to make. It doesn't cost you much and in no time you will have dessert for everybody to enjoy. First of course you may need to rinse and pit the cherries, and this job may take you more time than all else if you have a lot of cherries, or you can do as much cherries as you need to make the cake.

   
Now the simpler part! First we will mix the eggs with the sugar and then add lemon peel and butter or margarine.

   
You may warm up the butter a bit, don't take it out from the fridge directly. Not a big problem but may mix slowly if cold. You can warm it up in the microwave for some 30 seconds or so and then mix it all togehter.

   
Now add flour with baking powder into the mix and whip it.

   
When done, spread batter into prepared pan and put it in the approximately 390F preheated oven for some 10 minutes.

   
In the meantime we can prepare and mix everything for the coating.

   
When the baking is finished we can toss the cherries and scatter them. Now spill the coating over the cherries and put it back into the oven for some 25 minutes.

   
You can add some sugar over in the end and that would be it.
